With summer slowly coming to an end the best we can do is to enjoy the bright sunny days with some Grilled food. Grilled food is easy to make and all it takes is to MARINATE a day before turn your grill on make those delicious food.
If you try in a restaurant they add various colors to make it RED. Added colors changes the taste and flavor. The best way to get color to your food is to use Kashmiri Red Chilie Powder, Turmeric… you get a very natural color in whatever dish you make. KABOB needs some enterprising color so add a lot of them.
MARINATION is the key. Always use Non skimmed Yogurt for marination. Use ample oil as well. I generally don’t add salt during overnight marination and Salt tend to make your marination watery…
Use the spice that you have in your kitchen. Any Desi spice will be good for marination… it can be paparica, pepper powder anything that comes to your mind.
For grilling Coal is the the best. However it’s a very big overhead. For quick grilling use your gas grill and that’s the fastest way to make your food. Grill at 400 degrees and always use fresh lime juice … you are all set in 20 minutes….
